Crispy Buttermilk Fried Chicken Recipe

Step 1: In a large bowl, whisk together the buttermilk and salt. Add chicken and toss to coat and submerge, cover with plastic wrap and place in the fridge for 1 hour.

Step 2: For the dredge, In a separate bowl add flour, white pepper, celery salt, garlic powder, ground ginger, Italian seasoning and baking powder. Whisk and make sure all the ingredients are well combined. Add buttermilk and give it a toss until it looks like crumbs.

Step 3: Add one piece of chicken at a time from the buttermilk into the seasoned flour and firmly press to coat the entire surface area. Shake off any excess flour and then transfer the chicken to the wire rack. Continue dredging the remaining pieces of chicken.

Step 4: Fill a 7-8 quart heavy bottomed pot just over halfway with oil. Heat to 350 F. Line a baking sheet with a cooling rack and place that next to the hot oil.

Step 5: Add chicken with the skin facing down, cover with a lid and fry for 10 minutes. After 10 minutes flip chicken,cover and fry for an additional 7 minutes. They will be golden brown, crispy and the internal temperature of 165F. Transfer to the cooking rack to drain off excess oil and repeat with the remaining chicken.
