What You'll Need

Here are the ingredients for both the pancake and the syrup:

For the German Pancake:

  • 3 tablespoons butter

  • 3 large eggs

  • 1 cup milk

  • 1 cup + 3 tablespoons all-purpose flour

  • 2 tablespoons white sugar

  • 1 teaspoon vanilla extract

  • A pinch of salt

For the Blueberry Syrup:

  • 2 cups frozen blueberries

  • 3 tablespoons maple syrup

  • Powdered sugar, for dusting

Step 1: Place a 8x13 metal baking dish in the oven and preheat to 400F. (160C). Add the butter, let it melt, and heat for 5 minutes until light brown bits start to appear in the butter.

Step 2 : While the butter is heating, add milk, eggs, vanilla extract, all purpose flour and salt to a blender or food processor. Blend until combined.

Step 3: Open the oven and work quickly and carefully pour in the pancake mixture and close the oven.

Step 4: Cook for 15-18 minutes until browned and risen.

Step 5: While the pancake is in the oven, make the blueberry syrup. Place the blueberry and maple syrup in a pan and heat for about 8 minutes until the blueberries release their color and thicken. Turn off the heat and put to one side to cool slightly.

Step 6: Take the pancakes out of the oven ( the center may be very puffed up, but it will go back down after a minute) , sprinkle with powdered sugar and spoon in the blueberry syrup and cool whipped.

Step 7: Slice and serve!
