You return to a house that smells amazing and a dinner that is ready to serve.

Notes/Special Instructions
If you don’t have ham hocks, you could use diced ham or even smoked sausage for a different twist on flavor.
If the soup is too thick for your licking, you can add more water or broth to reach the desired consistency. If it’s too thin, let it simmer uncovered for a little longer.
Since the ham is cured or smoked adds saltiness, taste as you add salt gradually as needed.
Notes

1
Step 1: Heat olive oil in a large pot or dutch oven set over medium heat.

2
Step 2: Add the chopped onion, celery, carrots, and saute for 10 minutes. Stir in minced garlic, oregano, thyme and black pepper and cook for 1 minute.

3
Step 3: Transfer sauteed vegetables to crockpot and add water, bay leaves and ham hocks. Set the crockpot for 4 hours on high or 6 hours on low.

6
Step 6: Add maggie and the chopped ham back into the crockpot, if it looks too thick add ½ cup of water and cook for another 30 minutes on high. Taste the soup for salt and pepper and adjust accordingly.
