Step 1: In a large pot or dutch oven brown italian sausage over medium, use a spoon to crumble the sausage as you cook it.

Step 2: add onion and minced garlic, cook for an additional 3 minutes. Then add chicken broth, water and maggie cube.

Step 3: Add potatoes then bring to boil and reduce heat and simmer for 20 minutes. Don’t cook the potatoes for too long, you want them tender when pierced with a fork, but not mushy.

Step 4: Fry bacon in a large skillet then place them on some paper towels and set aside.

Step 5: Add kale and cream to the pot and stir well. Bring to a boil then taste to see if you need any salt and black pepper.

Step 6: Ladle the soup into bowls and serve it with crushed bacon.

16oz mild Italian ground sausage
6 strips of bacon (crispy)
1 large onion
2 large red potatoes
1 tbsp mince garlic
5oz baby kale
32oz chicken broth + 2 cups of water + 1/2 Maggie cube (or 6 cups of only chicken broth)
1 cup heavy whipping cream
salt and black pepper to taste
