Notes/Special Instructions

Fresh corn sliced right of the cob will yield the best flavor and texture for this street corn salad. The next best option is frozen sweet corn fowllowed by canned corn.

Step 1: In a large bowl, add mayonnaise, sour cream, lime juice, chipotle powder, cumin, black pepper, garlic powder and salt, stir well to make a sauce.

Step 2: Add green onions, chopped jalapeno, cilantro, mix well until it’s all combined and place in the fridge .

Step 3: Add butter to a large cast iron or skillet over medium high heat. Add corn and allow it to cook, stirring frequently until it starts to char and get some color. About 15-20 minutes. Allow to cool.

Step 4: Add corn and cotija cheese to dressing, mix well until it’s all combined and top with a sprinkling of additional cotija cheese and chipotle powder.

1/2 cup mayo

1/3 cup sour cream

juice from a lime

3 green onions

1/3 cup grated cotija cheese

1/4 cup cilantro (Chopped)

1 jalapeno(diced)

1 tsp chipotle pepper powder

1 tsp garlic powder

1/4 tsp cumin powder

salt and pepper
