Step 1: Preheat oven to 425 F ( 218 C)

Step 2: Wash and clean chicken thighs and pat dry.

Step 3: Drizzle olive oil and season with creole seasoning, garlic powder, black pepper, adobo seasoning, cumin, thyme, paprika and onion powder.

Step 4: Place seasoned chicken thighs in a large cast iron or oven safe dish and bake for 30 minutes. Turn the broiler on and finish cooking it for another 5 minutes.

Step 5: Remove spinach stems and roughly chop them and place into a large bowl with cream cheese and cheese. Chop chicken and thoroughly mix all these ingredients together

Step 6: Prepare the tortillas by drizzling some oil over each tortillas and place them in the microwave 20-30 seconds

Step 7: Fill and roll the taquitos by taking one warmed tortilla at a time, spoon about 2-3 Tbsp of the prepared chicken onto the center of the tortilla. Spread it into a log shape. Now, tightly roll the tortilla from one edge to the other, tucking in the sides slightly as you create a compact cylinder. Repeat this process with the remaining tortillas

Step 8:Crisping the taquitos in a large skillet add oil and allow oil to heat up and fry your taquitos on both sides
